In blogging 101 we had to make a decision for a monthly post. And I decided to make a monthly post on cooking (mostley baking) because it is one of my favorite things to do, so this is how Delicious Days began. For this month I made a Mocha Bundt Cake. It is very easy to make and very delicious. It is one of my favorite because it has coffe in it which is one of my favourite things to put on desserts. I did not make it all the same as in the recipe. It is a cake that everyone will love and wont have enough of it. Hope you enjoy it.
¾ cup unstalted butter (softened) ½ cup coffee
2 cups white sugar 2 teaspoons vanilla extract
¾ cup unsweetened cocoa powder 1 1/3 cups all-purpose flour
4 egg yolks 4 egg whites
1 teaspoon baking soda
2 tablespoons cold water
1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a Bundt pan. In a large measuring cup dissolve baking soda in water , then add coffee and vanilla. ( I also added a bit of cinamon)
2. In a large bowl , mix together the butter and suger until light and fluffy. Beat in the cocoa, then the egg yolks one at a time. Alternately beat in the flour and the coffe mixture until incorporated.
3. In another bowl, beat the egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites.
4. Pour batter into the bundt pan. Bake in the preheated oven for 60 minutes, or until a toothpick insertes into the center of the cake comes out clean.
